Quinoa is one of the best Vegan protein sources you could eat. It contains significantly more protein then any grain, and the quality of the protein is better then that of meat. It is also rich in vitamins and minerals and is low in fat. An all-round great food!
75g (3oz) of Quinoa
Freshly grated nutmeg to taste
2-3 tablespoons of rice milk
4 tablespoons low-fat natural live yoghurt
1 banana peeled and sliced
- Wash the Quinoa thoroughly to remove the residue on the grains. Place in a saucepan with 350-375ml of water and bring to the boil. Cover and simmer for 15mns. The mixture should be quite sloppy.
- Tip the mixture into a blender and process with the nutmeg and rice milk. Add more liquid if needed to give a porridge-like consistency.
- Return the mixture to the pan and gently reheat. Serve topped with a couple of spoonfuls of yoghurt and some sliced banana.
Tip: I love to add some chopped walnuts on top!
