Here’s a healthy version of the famous Piña Colada (sans alcohol). The greens add lots of Folate and antioxidants. Bananas are one of the best sources of Potassium and the coconut Milk is often hailed as anti-carcinogenic, anti-microbial, anti-bacterial, and anti-viral. The main saturated fat that it contains, lauric acid, is also found in mother's milk and has been shown to promote brain development and bone health.
1 cup loosely packed kale or baby spinach
1/2 cup pineapple pieces
1/2 cup light coconut milk or coconut water (the water is practically fat free)
Shredded coconut flesh as a topping and to taste
- In order: place kale, banana, pineapple, and coconut milk in the blender
- Cover and blend until ingredients are processed and smooth, about 1-2 minutes (if you need to make the smoothie thicker, stop and add a couple ice cubes and blend again until smoothie starts blending and/or reaches desired texture, repeat as needed).
- Garnish with some coconut flakes and enjoy!
